As we get ready to say goodbye to Summer, I have to admit it's a little bittersweet. Because even though it's clear that my loyalty is and will always be with Fall, there is something about Summer that no other season really has. And so as I get ready to go out of town and head to the beach, I'm definitely being reminded of the little things about Summer that truly make me happy! Like popsicles! Because nothing compares to a popsicle on a hot Summer day. Am I right? And who doesn't love the sounds of honeydew cucumber margarita popsicles? Sounds life changing, right? Okay, so I'm sure you're dying to know how to concoct these yummy Summer treats? You can bet I'll be attempting to make these at the beach. Want to know the recipe? Of course you do. {continued...}

Honeydew Cucumber Margarita Popsicles
{Recipe makes five 2-and-1/4-oz. popsicles}
{Ingredients}:
{Recipe makes five 2-and-1/4-oz. popsicles}
{Ingredients}:
1 cup honeydew juice (approximately a whole melon weighing 1lb)
1/3 cup cucumber juice (approximately half a cucumber weighing 5oz.)
½ cup tequila
1 tablespoon triple sec
1 tablespoon fresh lime juice
1 tablespoon mint simple syrup (recipe follows)
3 large mint sprigs
1/3 cup cucumber juice (approximately half a cucumber weighing 5oz.)

{Instructions}:
1. Place the honeydew and cucumber in a food processor or a blender and process until everything is pureed. Add tequila, triple sec, lime juice and mint syrup and process for another 20-30 seconds to blend well. Pour mixture into popsicles mold.
2. Freeze for about 2 hours or until mixture starts to solidify enough to hold a popsicle stick upright. Insert popsicle sticks and finish freezing popsicles overnight. To release popsicles run hot water on the outside of popsicle molds for a 2-3 seconds.

here in miami we are more than fans of popsicles... summer is a long a hot one!
green!!! I love how it combines almost perfectly with any other color. I would never have combined it with gray, my favorite combination for weddings is green and purple. Now I am considering the green and gray because it looks so elegant and natural!!!!! thank you.
